Cooking with Fire & Smoke – Christmas Dinner On Fire!
Christmas Day dinner is a lot of work, so why not use your BBQ as well as your inside kitchen?
We are bringing Christmas cooking to the outdoors and lighting our many BBQS, fire pit & wood fired ovens
The class will be hands on working as a team to create a festive feast!
Some prep will have been done behind the scenes
Our Chef will guide you through fire & smoke to create a Christmas Feast.
Snacks;
bacon latticed cotswold brie, cranberry, chilli jam, sourdough toast
mead cured & cold smoked salmon, crispy skin
Local stout & treacle cured, flame roasted fillet of beef, fermented horseradish creme
Main;
smoked & reverse seared, beer mustard marinated rib of beef,
Chef's secret weapon "Turkchetta",
beer brined turkey breast, smoked & grilled,
jalapeno honey glazed pig in a sleeping bag,
Spiced honey glazed panettone mince pie stuffing ,
honey fermented cranberry sauce,
Woodfire baked black garlic dauphinoise potato,
hot honey & thyme brown butter glazed parsnips,
charred carrots in carrot butter emulsion,
truffled smoked cheddar cauliflower cheese, with cheats cheese sauce,
guanciale & chestnut sauteed sprouts,
sticky date & clementine braised red cabbage,
woodfired yorkie puds,
Dutch Oven smoked figgy pudding, brandy butter flambe,
cold smoked butter for mash & brandy butter,
We will then enjoy feasting on all we have cooked with fire.
Our bar will be open to buy a drink to help with the festive cheer!
