Cooking with Fire & Smoke – Butchery & BBQ Beef Steak
We will start with a good coffee and a big bacon bap, to get you ready for the day.
Then you will join our master butcher Jon, from The Meat Hut in Longhope, as he breaks down a whole rump & loin into its primal cuts then down into steaks. We will only be using top quality, dry aged beef from local cows & local farmers.
We will discuss what each cut is, what else you can do with them, and what to ask your butcher for. Under Jon’s guidance, you will then have a featherblade to breakdown into flatiron steaks & trim. The trim will then be minced for you to take home.
Our fire chef will then demonstrate how to cook a variety of steaks for you to taste, showcasing different cooking techniques on wood & charcoal. You will cook some of your own steaks as well and take some home vacpacked to later.
The class will include discussions on;
What to ask your butcher for.
Benefits of hanging, dry aging, tallow aging.
Different steak cuisson and the importance of a temperature probe.
Different finishing touches, to include sauces & seasonings
The class also includes an information pack, unlimited hot drinks, a drink from the bar, and your meats to take home.
Our fully stocked bar & Forest Larder shop will be open to purchase items.
