British waters contain some of the finest seafood in the world.
Fresh fish cooked over woodfire can be one of the simplest and most rewarding ways to enjoy fish & seafood — whether you're cooking stuffed whole fish, fillets, or shellfish.
With the right techniques and top-quality ingredients, it’s easier than you think to achieve delicious results at home.
This class does come with a high price tag, that is because we will be using premium, top-quality, bang in season British catch. Supporting our fantastic fishermen & women!
Why BBQ Fish?
Cooking fish on the barbecue brings out its natural flavour, adding charred, smoky notes that elevate all the flavours.
It’s quick, healthy, and surprisingly easy — especially with fish that have firmer flesh and can stand up to live fire.
Whether you're hosting a fire cooked meal or enjoying a quiet evening outdoors, grilled fish can add flair and a refined touch to your menu.
This class will focus on seasonal seafood caught only in British waters. We will only use what is available that day/week, usually seafood caught by small day boats, the day before the class.
Some fish will be prepared in advance; some you will prepare yourself.
You will get to taste and cook a variety of fish, such as whole fish, fillets, shellfish, in and out of the shell. Some as tasters, some as finished dishes.
Examples of some dishes:
Hay blazed mussels.
Mirin & shio koji cured and flame grilled trout.
Scallops cooked in the shells and out.
Planked salmon.
Prawns or oysters a la flambadou.
Maybe even a St Ives Bay Lobster!
