Included in the price of your class is a ProQ Eco cold smoker box, cold smoking maze & 1 bag of wood dust to take home. 

You will learn how to cure your own bacon, guanciale, a simple salami, & a seasonal fish

Your chef will have pre-prepared some items to taste like the ones you will make during the class.  

You will take everything you make home with you, and you get a cold smoker kit to take home, to jump start your cold smoking journey. 

We will discuss dry aging bags and curing, fermenting and dry aging in your fridge.   

We will show and tell nduja, air dried meats & cheeses.
