Live Fire Dining - Theo's 1st Solo Popup Restaurant- 24th Oct 2025

Join us in the Apple Barn for a 3 course meal designed, cooked and served by Chef Theo.

Theo recently passed his apprenticeship with a distinction! We are very proud of him and of the chef he has become and we are excited to see him continue to grow and flourish!

To celebrate that, Chef Theo will be taking the reins of this popup to create a fire cooked meal celebrating what he has learnt since joining us here at HBCS.

 

to start 

Ragman’s beetroot – smoked, coal roasted & carpaccio. In-house cultured ACV dressing, maple-smoked salt flakes, pinenuts, garden herbs, in-house made feta 

Woodfired sourdough focaccia & black garlic cultured butter 

  

from the fires   

Woodfired spit roast of Debs GOS porchetta,  

stuffed with prosciutto, apricot, fennel, & orange, served with ember roasted celeriac puree 

Pomme boulangère - layered potato with in-house cured guanciale & fried onions 

Clay oven roasted seasonal veg, nasturtium pesto

Buttermilk pannacotta,  

berry puree, sesame seed brittle, caramelised white chocolate crumb
