Soft Cheeses & Whey Bread
Together we will make a range of cheeses, including a soft cheese & a goat's cheese.
Your chef tutor will show the process for a cow’s milk feta, a mozzarella and a labneh.
Then using your warm whey from your freshly made cheeses, you will be guided through making and baking a focaccia.
We will discuss the separation of the curds from the whey, ingredients and essential equipment.
All the milk is fresh from two dairy farms less than 2 miles away from the School, the Mitcheldean Milkshed and Oh My Goat, goats milk & gelato.
The class will be a combination of demo and hands on in groups. Recipes and tastings will be available.
